How nutritious is cucumber

Cucumber has always been appreciated as a dieter-friendly vegetable. It is low in saturated fat, harmful cholesterol and sodium. Another important health-beneficial aspect of cucumber is that it is rich in Vitamin C, Vitamin K, Vitamin A, and pantothenic acid. The essential minerals such as potassium, magnesium, phosphorus and manganese are also present in this vegetable.

The high nutritional value of cucumber makes it ideal for maintaining optimum health balance. It also finds place in the diet prescribed for obese people as cucumber favors weight loss. Technically speaking, cucumber should be classified as a fruit since it contains the seeds to reproduce. But, generally, cucumbers are considered as a vegetable due to their use. However, cucumber is eaten in raw form as a fruit and is cooked and preserved like a vegetable as well.

Many pickles that are made from cucumbers remain a hot favorite of spice lovers. Preserving cucumber effectively helps in the making of different pickle varieties. Studies made in this regard indicate that over five million pounds of cucumber pickles are consumed daily. Another beneficial aspect of cucumber is that the nutrition loss is minimal even after thorough cooking.

Fresh cucumber is found to be an abundant source of the vitamin C. It is also rich in the mineral molybdenum. Folate, dietary fiber and magnesium are also present in cucumber. The crisp fruit also contains health-friendly compounds called sterols. This factor helps in lowering the cholesterol level in man.

Cucumbers are found to be a great digestive aid and cleanse the bowel effectively. As its green color indicates, this vegetable is a great source of chlorophyll, which is an important phytonutrient. It should be ensured that cucumbers are stored in plastic containers in order to help them maintain their natural moisture. It is advisable to store this vegetable in a cool environment for maintaining its freshness.
